Later, as the recipe spread throughout the country, it changed the cuisine by incorporating Fingerroot, shallot, and dry chili, which differ from the south recipe in terms of ingredients, and the color of the south curry is yellow due to the presence of turmeric as the main ingredient; as a result, people refer to the curry as “Gaeng leuuang” because of its color. The aroma and flavor of “Gaeng leuuang” vary depending on the region. The curry in Nakhon Si Thammarat province is spicy and intense. Phatthalung uses a curry paste that is quite hot, and the curry’s color originates from local chilies. Gaeng leuuang, on the other hand, concentrates on fresh chiles. As a result, it has a light and peppery flavor. The popularity of southern Thai curry has spread to the central region, particularly the capital. It was most likely derived from the royal court’s ties with the southern provinces during the central Rattanakosin period.

There is evidence that the original Gaeng leuuang exists. Mom Luang Nueng Nilrat once said in a book of Royal Thai food that the Gaeng leuuang was originally from the south, citing those who came to teach the cuisine at the palace who had come from the south.
