The aroma and flavor of “Gaeng leuuang” vary depending on the region. The curry in Nakhon Si Thammarat province is spicy and intense. Phatthalung uses a curry paste that is quite hot, and the curry’s color originates from local chilies. Gaeng leuuang, on the other hand, concentrates on fresh chiles. As a result, it has a light and peppery flavor. The popularity of southern Thai curry has spread to the central region, particularly the capital. It was most likely derived from the royal court’s ties with the southern provinces during the central Rattanakosin period.

There is evidence that the original Gaeng leuuang exists.
